Kueh Lapis

This is a favorite with my mum and younger brother. His a sucker for this kueh. It is tedious to stand and pour for 3 hrs every
Layer but not the mixing part for me. Keke KA helps me loads. So here is the recipe which I attended Richard Goh class and bought th booklet recipe but didnt attend this class and made a few changes to it. Hope his not angry as its sweet for my taste being health conscious as my grandma is elderly and growing wide being seated in wheelchair most of the time :

Ingredients A:

500g butter
300g condense milk
3 tsp rum
150g flour
1 tbsp 5 spice powder (from malaysia) or normal 5 spice as long use fresh one should do the trick of a better bake
20 egg yolk
100g sugar

Ingredients B:

10egg whites
100g sugar
1/4 cream of tartar

Equipment use:
1 9" cake tray ( lined based  only)
Spatula
Big Soup scoop (mine was pretty big)
Metal Presser

How to:

Heat oven at 200c . Slightly bake ur tin  (roughly takes5 mins )just before  u incoporate ur egg yolk batter into egg whites.(last step)

Beat butter, sugar, condense milk, rum till pale yellow. Then under low speed add yolks one at a time. Till totally incoporated.

Sieve flour and 5 spice powder and fold in using spatula into butter mix , at this moment my KA was beating my egg whites, sugar and tartar at speed 6 and speed 4.

*check every now and then. Dont over beat ur egg whites...

Now till to get handy. Scoop some egg white into the egg yolk batter and fold it in . Now scoop some and fold it in again. To ensure egg yolk batter was full mix to the bottom of bowl, pour the rest *batter into the egg whites and mix well.

Time to bake:

Remove cake tin from oven and pour in the first layer 1 scoop at a timeand even out the batter by turning here there till it covers the tin and bake at 220c till golden brown. (Switch to top heat only  and increase heat to 230c ) at this point. Use a metal presser every time when the lapis is out of the oven to prevent air pockets from forming. Continue baking layer by layer till batter was used up. 

Remember its hot. Do wear both gloves to protect ur hands.

During last layer, do watch out as easily dry out.. or char tar.... remove from tin immediately and cool down totally before cutting. So there u have it. Ur very own lapis.

Ps: the lapis looks more like lapis the following day. Its like mooncake returning oil look and taste better too. Keep in fridge always to prevent moulds and spoiling ur long long hours to bake lapis. And wrap ur lapis with cling wrap at least  2 layers.

Happy Annoucements

I will be starting to post recipes to share from now on except cakes for sale. :p Pardon my side of sale part as I need to feed 2 growing boys.

Yes yes yes, I know I had not blog this page for a long time as till date I still cant log in my blog using hp. So currently trying to log in using hp inorder to post pictures n how to cook so on & so for. So do watch out this coming upgrading...

BTW if anyone of u, do know how to log in blog using andriod hp, could u kindly leave a comment. So that I can upload faster ...k .k. k ..

Milk Chocolate Delights'

This is a all time best. All the kids love it. Only cake was for Home eating. Mini cupcakes was given out. I added small cube of strawberry before topping with Milk Chocolate Ganache & some sprinkle. Just nice a mouth in it goes..... cake is 4 layers of Chocolate Ganache with strawberries cubes.... Believe with blueberry jam might be even better. I cant wait to try it out .


MANGO YOGURT SNOWSKIN MOONCAKE

Hi there, I am so sorry but I am unable to produce this recipe as I have lost it as It was done last year.
But not to worry I still remember the steps only quantity forgot.

U may just use a normal snowskin mooncake skin & replace the water with Mango Yogurt Drink & 2 drops of orange or yellow)optional & mango essence .

Filling - advance 1or 2 days do

4 Mangoes or u can get Pooh Huat instant mango puree 1 bottle( I  gotten non sugar added hence I added sugar to suit my family's taste)
3 tbsp Gelatine powder
8 tbsp of icing sugar
1 tbsp of hot water
1 tbsp custard Powder (optional)

Melt the Gelatine in hot water till dissolve.
Mix everything together. Pour into the mould u r using afterwards for imprint. (if u dont have this it is ok,  get a low square plate or tin(line it with cling*for easy removing) put in fridge. cut it into almost ur intended shapes. Usually cut into rectangles or u may use ice cubes round balls mould.
Wrap the snowskin+filling and pinch skin well before u mould it & it comes out purfecto.

It will taste somewhat like sherbet jelly ice cream & Mango puree in-between. Note: if above is not done well, it might taste strange.

MILK MOONCAKE OF POOH

Milk mooncake was created as I forgot that at home have no egg for the glace part hence I replace milk for glacing as I am so tired to go out purchase the eggs... They look good to eat and taste exectly like store bought piggy in a cage. So try it out.

The recipe was at my piggy mooncake except glacing part. U will need about 15g of milk. Glace it before it is baked to prevent it from cracking 1st.

Glace was chocolate paste added into low fat milk. Or u can simply use chocolate milk, like what I did.

Strange the picture somehow inverted itself which I tried to rotate but fail.  So pls tilt ur own heads. :p
